Not at all sure on food allergies or preferences but I do this mosh of casserole style things where I put a layer of refried beans, a layer of chicken from a rotisserie or from steamed/cooked or even canned chicken, then put a layer of salsa and then top with something like this to bake on top.
Enchiladas are also pretty easy and you can make up a few pans and put them in the freezer to reheat later for instant dinner.
